So yesterday amid flurries of phone calls, much waiting on hold with the airline, and a fair amount of watching of Katrina coverage I cast-on for the Whitby socks from "Knitting on the Road" by Nancy Bush. I’m using cashmerino and size 2 DPN’s and am wondering if perhaps I ought not to have bought 3 balls. At this rate, I’ll soon know!
I was planning to make some banana bread for Daniel yesterday but when I turned on the oven to preheat I smelled gas and promptly shut it off. I decided instead to make some Kashi crispies. I smelled gas using the stovetop as well but the syrup was already at temperature by the time I realized that. Luckily we didn’t blow ourselves up. There’s someone coming shortly to check everything out.
Marshmallows with Kashi
2 envelopes unflavored gelatin
1 1/2 cups sugar
2/3 cup light corn syrup
1/8 teaspoon salt
1 teaspoon vanilla
cooking spray
1 box Kashi puffed cereal
Coat a 9 x 12-inch baking pan with cooking spray, line with parchment paper
and coat the paper with cooking spray. Combine gelatin and 1/3 cup water in the
bowl of a mixer and let soften at least 5 minutes.
Combine sugar, corn syrup, salt and 1/3 cup water in a small saucepan and
bring to a boil. Allow mixture to boil undisturbed for about 5 minutes, until
the temperature registers 238 F on a candy thermometer.
Slowly stream the syrup into the gelatin mixture with
the mixer running on low until all of the syrup has been transferred. Gradually
increase the speed to high and beat for about 12 minutes or until the mixture
triples in volume and becomes white and quite fluffy. Add the vanilla and
continue to beat until well incorporated. Fold in the cereal and spread into the baking pan. Let cool for a few hours to set.

Wonder if my kiddos would like those…must give them a try. Timothy and I made some yummy banana chocolate chip muffins yesterday (epicurious recipe). Glad everything is okay with Chris and fam for now.

I had a little problem with some chocolate chips that were supposed to go in some cookies yesterday. They didn’t get that far…..note the Woollywarbler hamster effect cheeks. Hope the gas man sorts you out, Julie without an oven is like needles without yarn!
