
These are the socks I finished while on vacation. The pattern is Peak Experience by Fiber Trends, I did the Angel’s rest variation. The only modification I made was to use an eye of partridge heel rather than plain slip stitch. Normally I go down a needle size but as this pattern called for either a 1 or a 1 1/2 I just used the smaller size. The yarn is lemon drop by Yarntini and was fab to knit with.



Last night we had a simple dinner of pork, sweet potato fries (just slice, season and then bake at 350 for about half an hour) with walnut garlic beets. Yum! In this heat I wanted to avoid using the oven so I did the fries in the toaster oven and the beets on the stovetop.
Beets with garlic and walnuts
1 bunch beets, washed and trimmed
2 cloves garlic, sliced
2 tablespoons olive oil
1/2 cup walnuts
Place beets in a small saucepan and cover with water, bring to a simmer. Simmer about 30 minutes or until tender. Drain and set aside to cool for a few minutes. Saute the garlic in olive oil until lightly browned, add the nuts and saute just a minute longer until nuts begin to brown. Remove from heat. Peel and quarter beets, top with garlic mixture. Season with salt and pepper.
