When I saw the bags of key limes at the market I got a craving for key lime pie. This one is super simple- a chocolate cookie crust filled with three egg yolks, 1/2 cup key lime juice, a pinch of salt and a can of sweetened condensed milk. Bake off at 400F for 12 minutes and then cool to room temperature. Top with whipped cream sweetened with a bit of sugar and some vanilla extract. Juicing all those limes a pain? I discovered that a garlic press works beautifully on quartered seeded key limes. I squished a few and then Daniel and Jason did the rest between them. Hungry fellas walking through the kitchen can be most useful!

I think I am going to try this for my card game tomorrow night. Does the chocolate pie crust really go ok? or would you suggest the plain one?
