

A: A Blueberry Jam!
Yesterday I poked about in the big freezer downstairs plotting dinners for next week with CSA meat when I noticed last summer’s blueberries still patiently waiting. Next thing you know, I was up in the kitchen knocking out this lovely cobbler. It’s quite tasty and not overly sweet.
For the filling:
1/4 cup cornstarch
1/2 cup sugar
6 cups blueberries
juice of a lemon
For the topping:
1 1/2 cups all-purpose flour
1 1/2 teaspoons double-acting baking powder
3/4 teaspoon salt
1 teaspoon baking spice
1 cup buttermilk
bake at 400F 1 hr 15 min.
EDIT: there should also be 1/2 butter cut into the topping before you stir in the buttermilk

Oh – that looks & sounds delicious! I may have to give it a go this weekend – I need to use up my blueberries from last summer since I’ve already “rented” my blueberry bush in Michigan again this year.
