Vanilla panna cotta with fresh berries
Pour 1 package (3 teaspoons) unflavored gelatin over 1/4 cup cold water and let stand. Heat 2 cups cream with 1/4 cup sugar, 1 vanilla bean (split and scraped, all goes into the pot) and a pinch of salt over medium heat until the sugar dissolves and the mixture comes to a light simmer. Remove from heat and whisk in the softened gelatin. Stir in 2 cups cold milk and 1 teaspoon vanilla extract. Pour into 6 ounce ramekins and chill 6 hours or until set.
