Last night I spent a couple hours chopping a package of sliced cremini, 5 carrots, 6 stalks celery, 2 ginormous leeks, and 6 pounds of leftover turkey. Today I have a package of mini Brussels sprouts to clean and I’ll also add frozen peas and corn. I need to make a slew of crust this morning and then by afternoon I’ll be ready to get going with my pot pies.

  1. Looks yummy. We scaled back this year and just did a breast. We’ll have to do another one because we ended up eating the first one in two or three meals, so no pot pies right now. Maybe next weekend. :)
